He was able to communicate with every level of the brigade supplying the correct knowledge for each level within the kitchen, never overloading anyone with information but always willing to share knowledge. Wayne created the food safety management system from scratch to suit the business for the kitchen and food service areas. He spent time in each of the F&B areas to ensure the system he delivered was workable by every colleague. The system included the due diligence logbooks that were required for the scale of the operation. He made sure they were constantly updated with any changes required by law or the business.
